Sesame-Peanut Fried Fish
2 Pieces of Fillet Fish (Whiting, Talapia).
1 Cup of Peanut Flour (crushed peanuts to a fine powder).
1/2 Cornmeal.
1 Onion (chopped and diced).
1 Green Pepper (chopped and diced).
2 Mashed and Chopped Garlic Cloves.
Saute a Frying Pan with mixture of Virgin Coconut oil and Sesame Oil.
4 Tablespoons.
Add Onions, Peppers and Garlic Make a small mound and let it cook until the onions and garlic are brown and caramelize.
Mix Both Peanut Flour and Cornmeal in a plastic bag.
One Fillet at a time. Bread the Fish in the bag.
It let's the flour bread the fish 100%. Place in Frying
Pan. Add a sprinkle of flour to the top layer to prepare
for a nice thick crust. .
Batsmati Rice and Black Beans.
1 Cup of Rice
2 Cups of water (bring to a boil).
Let the rice cook for 20 min. (until the water evaporates, taste rice to see if it needs more time to cook.
Seperate pot. 1 1/2 cup of Black Beans.
(from a can or overnight soaked)
2 Tablespoons of Ketchup (organic)
2 Tablespoons of Nutritional Yeast.
Few Shakes of Garlic Powder.
Let it come to a boil.
Once the Rice is finished, Mix
Rice and Beans together.
Peel and Boil 2 Red Beats in a small Pot.
Cook for the same time as the rice and fish.
Once the Beats become soft, cut them into halfs
Strain the water, and add 1/3 cup of Rice Vinegar.
Ready to serve.
Last but not least is Dessert.
Tonight's Special is
Apple-Ginger Stout Corn muffins.
4 Peeled and Chopped Apples
1 Stem of Ginger Peeled, Finely Diced.
1 Cup of Brown Sugar
2 Eggs. (remove the white embryo near yolk).
1/2 Cup of Stout (Creme Stout)
Mix into a Blender turn into a smoothie.
Mix into bowl with.
1 Cup of Cornmeal.
1/2 Cup of Unbleached Flour.
1 Tablespoon of Olive Oil.
1/4 teaspoon of baking powder.
Pour Batter into muffin sheet.
Bake for 12 - 15 minutes.
